Vegetable Stir-Fry

Ingredients:

  • 1 bell pepper (sliced)
  • 1 carrot (peeled and julienned)
  • 1 cup broccoli florets
  • 2 tbsp soy sauce
  • 1 tsp fresh ginger (grated)
  • 1 clove garlic (minced)
  • 1 tbsp sesame oil (or vegetable oil)
  • Rice (for serving)

Instructions:

  1. Prepare rice: Cook rice according to the package instructions (use a rice cooker or stovetop method).

  2. Stir-fry vegetables: Heat sesame oil in a large pan or wok over medium-high heat. Add garlic and grated ginger, sautéing for 1 minute.

  3. Add veggies: Add bell pepper, carrot, and broccoli to the pan. Stir-fry for about 5-7 minutes, until the vegetables are tender but still crisp.

  4. Season: Add soy sauce to the vegetables, stirring to coat.

  5. Serve: Serve the stir-fried vegetables over the cooked rice.
