Vegetable Stir-Fry
Ingredients:
- 1 bell pepper (sliced)
- 1 carrot (peeled and julienned)
- 1 cup broccoli florets
- 2 tbsp soy sauce
- 1 tsp fresh ginger (grated)
- 1 clove garlic (minced)
- 1 tbsp sesame oil (or vegetable oil)
- Rice (for serving)
Instructions:
Prepare rice: Cook rice according to the package instructions (use a rice cooker or stovetop method).
Stir-fry vegetables: Heat sesame oil in a large pan or wok over medium-high heat. Add garlic and grated ginger, sautéing for 1 minute.
Add veggies: Add bell pepper, carrot, and broccoli to the pan. Stir-fry for about 5-7 minutes, until the vegetables are tender but still crisp.
Season: Add soy sauce to the vegetables, stirring to coat.
Serve: Serve the stir-fried vegetables over the cooked rice.
