Egg Fried Rice

Ingredients:

  • 2 cups cooked rice (preferably day-old rice)
  • 2 eggs (scrambled)
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 green onions (chopped)
  • 2 tbsp soy sauce
  • 1 tbsp oil

Instructions:

  1. Scramble the eggs: Heat 1 tablespoon of oil in a pan over medium heat. Crack the eggs into the pan and scramble them until fully cooked. Remove and set aside.

  2. Cook vegetables: In the same pan, add diced carrots and peas. Stir-fry for about 3-4 minutes until tender.

  3. Add rice: Add the day-old rice to the pan and stir to break up clumps. Cook for about 5 minutes.

  4. Combine eggs and season: Add the scrambled eggs back into the pan. Stir in the soy sauce and cook for another 2 minutes.

  5. Serve: Garnish with chopped green onions and serve warm.
