Crispy Chickpea Salad

Ingredients:

  • 1 can chickpeas (drained and rinsed)
  • 2 cups mixed greens or lettuce (chopped)
  • 1 tomato (diced)
  • 1 cucumber (sliced)
  • 2 tbsp olive oil
  • 1 tbsp tahini (optional for dressing)
  • Salt and pepper

Instructions:

  1. Roast chickpeas: Preheat oven to 400°F (200°C). Pat the chickpeas dry with a paper towel, toss with olive oil, salt, and pepper, then spread in a single layer on a baking sheet. Roast for 25-30 minutes, shaking the pan halfway.

  2. Prepare the salad: In a large bowl, combine mixed greens, tomato, and cucumber.

  3. Make dressing: In a small bowl, whisk together tahini, olive oil, and a pinch of salt and pepper. Add water to thin out the dressing if necessary.

  4. Assemble: Once the chickpeas are crispy, add them to the salad. Drizzle with the dressing and toss to combine.

  5. Serve: Serve immediately for a crunchy, healthy meal.
