Sri Lankan Kottu Roti

Ingredients:

  • 3 large Sri Lankan paratha (roti), chopped into small pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-2 green chilies, sliced
  • 1 cup mixed vegetables (carrots, cabbage, beans)
  • 1 egg (optional)
  • 1/2 cup cooked chicken, beef, or mutton (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • Salt to taste
  • Oil for frying
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a large pan or wok. Add onions, garlic, and green chilies, sautéing until fragrant.
  2. Add the mixed vegetables and cook until tender, then add the soy sauce and curry powder. Stir well.
  3. If using meat, add it now and stir-fry for a couple of minutes.
  4. Push the mixture to one side of the pan. On the empty side, crack the egg and scramble it until cooked.
  5. Add the chopped roti pieces to the pan and stir-fry everything together. Adjust seasoning with salt and additional soy sauce if needed.
  6. Garnish with fresh cilantro and serve hot.
