Sri Lankan Kottu Roti
Ingredients:
- 3 large Sri Lankan paratha (roti), chopped into small pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1-2 green chilies, sliced
- 1 cup mixed vegetables (carrots, cabbage, beans)
- 1 egg (optional)
- 1/2 cup cooked chicken, beef, or mutton (optional)
- 2 tablespoons soy sauce
- 1 tablespoon curry powder
- Salt to taste
- Oil for frying
- Fresh cilantro for garnish
Instructions:
- Heat oil in a large pan or wok. Add onions, garlic, and green chilies, sautéing until fragrant.
- Add the mixed vegetables and cook until tender, then add the soy sauce and curry powder. Stir well.
- If using meat, add it now and stir-fry for a couple of minutes.
- Push the mixture to one side of the pan. On the empty side, crack the egg and scramble it until cooked.
- Add the chopped roti pieces to the pan and stir-fry everything together. Adjust seasoning with salt and additional soy sauce if needed.
- Garnish with fresh cilantro and serve hot.
