Quinoa Salad with Chickpeas and Avocado

Ingredients:

  • 1 cup quinoa (rinsed)
  • 1 1/2 cups water or vegetable broth (for cooking quinoa)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cumin (optional)
  • Salt and pepper, to taste

Instructions:

  1. Cook the quinoa:

    • In a medium saucepan, bring 1 1/2 cups of water or vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until all the liquid is absorbed. Fluff with a fork and let it cool for a few minutes.
  2. Prepare the vegetables:

    • While the quinoa is cooking, dice the avocado, cucumber, and cherry tomatoes. Thinly slice the red onion and chop the fresh parsley or cilantro.
  3. Make the dressing:

    • In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, ground cumin (if using), salt, and pepper. Taste and adjust the seasoning as needed.
  4. Combine the salad:

    • In a large bowl, add the cooked quinoa, chickpeas, avocado, cucumber, tomatoes, red onion, and fresh herbs. Drizzle with the dressing and toss gently to combine.
  5. Serve:

    • Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together. This quinoa salad can be served as a main dish or as a side to complement other meals.
