Sri Lankan Chicken Curry Recipe
Ingredients:
For the Curry:
- 1 kg chicken (cut into pieces, bone-in preferred)
- 2 medium onions (finely chopped)
- 4 garlic cloves (minced)
- 1-inch piece of ginger (grated)
- 2 medium tomatoes (chopped)
- 2-3 green chilies (slit)
- 1 cup coconut milk
- 1 cup water
- 2 tablespoons oil
For the Spice Mix:
- 2 teaspoons curry powder (Sri Lankan or roasted variety)
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon fennel seeds
- 2-inch piece of cinnamon
- 2-3 cardamom pods
- 4-5 cloves
- 10-12 curry leaves
- Salt to taste
Optional Garnish:
- Fresh cilantro leaves
Instructions:
1. Marinate the Chicken:
- Mix chicken pieces with turmeric, chili powder, salt, and a teaspoon of curry powder.
- Let it marinate for 20-30 minutes.
2. Prepare the Curry Base:
- Heat oil in a large pot or pan over medium heat.
- Add fennel seeds, cinnamon, cardamom, cloves, and curry leaves. Sauté until aromatic.
- Add onions, green chilies, ginger, and garlic. Cook until the onions are golden brown.
3. Cook the Curry:
- Add tomatoes and cook until softened, forming a thick paste.
- Stir in the curry powder, coriander powder, cumin powder, and chili powder. Cook for 1-2 minutes.
- Add the marinated chicken and mix well to coat it with the spices.
- Pour in water and cover the pot. Simmer for 20-25 minutes, stirring occasionally.
4. Finish with Coconut Milk:
- Add the coconut milk and cook uncovered for another 10 minutes until the curry thickens to your desired consistency.
- Taste and adjust salt and spice levels as needed.
5. Garnish and Serve:
- Garnish with fresh cilantro leaves.
- Serve hot with steamed rice, roti, or bread.
