Sri Lankan Chicken Curry Recipe


Ingredients:

For the Curry:

  • 1 kg chicken (cut into pieces, bone-in preferred)
  • 2 medium onions (finely chopped)
  • 4 garlic cloves (minced)
  • 1-inch piece of ginger (grated)
  • 2 medium tomatoes (chopped)
  • 2-3 green chilies (slit)
  • 1 cup coconut milk
  • 1 cup water
  • 2 tablespoons oil

For the Spice Mix:

  • 2 teaspoons curry powder (Sri Lankan or roasted variety)
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon fennel seeds
  • 2-inch piece of cinnamon
  • 2-3 cardamom pods
  • 4-5 cloves
  • 10-12 curry leaves
  • Salt to taste

Optional Garnish:

  • Fresh cilantro leaves

Instructions:

1. Marinate the Chicken:

  1. Mix chicken pieces with turmeric, chili powder, salt, and a teaspoon of curry powder.
  2. Let it marinate for 20-30 minutes.

2. Prepare the Curry Base:

  1. Heat oil in a large pot or pan over medium heat.
  2. Add fennel seeds, cinnamon, cardamom, cloves, and curry leaves. Sauté until aromatic.
  3. Add onions, green chilies, ginger, and garlic. Cook until the onions are golden brown.

3. Cook the Curry:

  1. Add tomatoes and cook until softened, forming a thick paste.
  2. Stir in the curry powder, coriander powder, cumin powder, and chili powder. Cook for 1-2 minutes.
  3. Add the marinated chicken and mix well to coat it with the spices.
  4. Pour in water and cover the pot. Simmer for 20-25 minutes, stirring occasionally.

4. Finish with Coconut Milk:

  1. Add the coconut milk and cook uncovered for another 10 minutes until the curry thickens to your desired consistency.
  2. Taste and adjust salt and spice levels as needed.

5. Garnish and Serve:

  • Garnish with fresh cilantro leaves.
  • Serve hot with steamed rice, roti, or bread.
