Homemade Shushi

Simple Japanese Sushi Recipe


Ingredients:

For Sushi Rice:

  • 2 cups Japanese short-grain rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

For Sushi Rolls:

  • Nori (seaweed sheets)
  • Fillings (choose a combination):
    • Fresh raw fish (like salmon or tuna)
    • Cooked shrimp or crab sticks
    • Sliced avocado
    • Cucumber strips
    • Cream cheese
    • Pickled radish or carrots
  • Soy sauce (for dipping)
  • Wasabi (optional)
  • Pickled ginger (optional)

Tools:

  • Bamboo sushi mat (makisu)
  • Sharp knife

Instructions:

1. Prepare the Rice:

  1. Wash the rice thoroughly under cold water until the water runs clear.
  2. Add rice and water to a rice cooker or pot and cook according to the instructions.
  3. Once cooked, transfer rice to a large bowl.
  4. Mix rice vinegar, sugar, and salt in a small saucepan over low heat until dissolved. Let it cool slightly.
  5. Pour the vinegar mixture over the rice and gently mix with a cutting and folding motion to avoid mashing the rice. Allow it to cool to room temperature.

2. Prepare the Fillings:

  • Cut fish, avocado, cucumber, or other fillings into thin, lengthwise strips.

3. Assemble the Sushi:

  1. Lay a sheet of nori shiny side down on the bamboo mat.
  2. Spread a thin, even layer of sushi rice over the nori, leaving about 1 inch at the top edge free for sealing.
  3. Place fillings horizontally across the center of the rice.
  4. Lift the bamboo mat edge closest to you and begin rolling it tightly over the fillings. Use gentle pressure to form a firm roll.
  5. Seal the edge by moistening the exposed nori with water.

4. Slice the Sushi:

  • Use a sharp knife to slice the roll into 6-8 even pieces. Wipe the knife with a damp cloth between cuts to prevent sticking.

5. Serve:

  • Arrange sushi on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
