Chicken Alfredo
Ingredients:
- 2 chicken breasts (sliced into strips or cubes)
- 200g pasta (fettuccine or spaghetti)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 2 tbsp butter
- Salt and pepper
Instructions:
Cook the pasta: Boil a large pot of salted water. Cook the pasta according to the package instructions, then drain and set aside.
Cook the chicken: While the pasta is cooking, season the chicken with salt and pepper. Heat 1 tablespoon of butter in a pan over medium heat. Add the chicken and cook for about 7 minutes, flipping halfway through until fully cooked. Remove from the pan and set aside.
Make the Alfredo sauce: In the same pan, melt the remaining butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in the heavy cream, and bring to a simmer. Let it cook for 3-4 minutes until it thickens slightly.
Add Parmesan: Stir in the Parmesan cheese and mix well. Let the sauce cook for an additional 2 minutes.
Combine: Add the cooked pasta and chicken to the sauce, tossing everything to coat. If the sauce is too thick, add a little pasta water to thin it out.
Serve: Serve immediately with extra Parmesan cheese on top.
