Avocado Toast with Poached Eggs

Ingredients:

  • 2 slices of whole-grain bread (or bread of your choice)
  • 1 ripe avocado
  • 2 large eggs
  • 1 tbsp white vinegar (for poaching the eggs)
  • Salt and pepper (to taste)
  • A pinch of red pepper flakes (optional)
  • Fresh lemon juice (optional)
  • Olive oil (optional for drizzling)

Instructions:

  1. Toast the bread: Toast your bread slices to your desired level of crispiness.

  2. Prepare the avocado: While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth or chunky, depending on your preference. Add salt, pepper, and a squeeze of lemon juice for extra flavor.

  3. Poach the eggs: Bring a pot of water to a gentle simmer, and add the vinegar. Crack each egg into a small bowl. Create a gentle swirl in the water with a spoon, then carefully slide in the eggs. Poach for about 3-4 minutes until the whites are set, but the yolks are still soft. Remove with a slotted spoon.

  4. Assemble the toast: Spread the mashed avocado evenly on each slice of toasted bread. Top with a poached egg on each.

  5. Season and serve: Sprinkle with salt, pepper, and red pepper flakes (if using). Drizzle with a little olive oil for extra richness.
