Spinach and Feta Omelette

Ingredients:

  • 2 large eggs
  • 1/4 cup fresh spinach, chopped
  • 2 tablespoons feta cheese, crumbled
  • 1 tablespoon milk (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter
  • Optional: diced tomatoes, onions, or bell peppers

Instructions:

  1. Prepare the Eggs:

    • In a bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.
  2. Cook the Spinach:

    • Heat olive oil or butter in a non-stick skillet over medium heat.
    • Add the chopped spinach (and any optional vegetables) and sauté for 1-2 minutes until wilted.
  3. Add the Eggs:

    • Pour the egg mixture over the cooked spinach in the skillet.
    • Cook for about 2-3 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
  4. Add Feta Cheese:

    • When the omelette is mostly set but still slightly runny on top, sprinkle the feta cheese over one half of the omelette.
  5. Fold and Serve:

    • Carefully fold the omelette in half and let it cook for another minute until the cheese is slightly melted.
    • Slide the omelette onto a plate and serve hot.

Tips:

  • Serve with whole-grain toast or a side of fruit for a complete meal.
  • Feel free to add herbs like parsley or dill for extra flavor.
