Spinach and Feta Omelette
Ingredients:
- 2 large eggs
- 1/4 cup fresh spinach, chopped
- 2 tablespoons feta cheese, crumbled
- 1 tablespoon milk (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil or butter
- Optional: diced tomatoes, onions, or bell peppers
Instructions:
Prepare the Eggs:
- In a bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.
Cook the Spinach:
- Heat olive oil or butter in a non-stick skillet over medium heat.
- Add the chopped spinach (and any optional vegetables) and sauté for 1-2 minutes until wilted.
Add the Eggs:
- Pour the egg mixture over the cooked spinach in the skillet.
- Cook for about 2-3 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
Add Feta Cheese:
- When the omelette is mostly set but still slightly runny on top, sprinkle the feta cheese over one half of the omelette.
Fold and Serve:
- Carefully fold the omelette in half and let it cook for another minute until the cheese is slightly melted.
- Slide the omelette onto a plate and serve hot.
